1 tbsp. grape/olive oil
1 tbsp. lemon juice or apple vinegar
4 cloves garlic, minced finely
1/8 tsp.sea/kosher salt
1/8 tsp. black ground pepper
1/2 cup greek yogurt,
1/2 cup sour cream
2 small cucumbers, peeled, seeded and diced
1 tsp. chopped fresh dill
1 tablespoon chopped fresh mint
Place all ingredients into food processor, except for cucumbers, dill and mint.
Blend them until even on low.
Add remaining ingredients and chop the cucumbers into small pieces.
Refrigerate at least 2 hour before serving.
