Beef Noodle Soup
2 Tbls olive oil
1 celery stalks, finely chopped
1 medium onion, finely chopped
1 bell pepper, finely chopped
1 carrot stick (cut anyway you like: circles, cubed, shredded etc.)
8 cups of beef broth
2 cups uncooked rotini pasta
1 can (15 oz) Southgate Vegetable Stew with Beef
2 Tbls red wine (or vinegar)
Salt to taste
¼ tsp freshly grounded black pepper
Any of your favorite spices
I added some ¼ tsp Cajun Spice Seasoning to spice it up & fresh dill springs
Direcitons:
1. In large skillet, heat oil, and cook celery, onions, bell pepper, & carrots, on mid-high, for 5 min or
until tender.
2. In a medium kettle, heat to boiling, beef broth, uncooked rotini pasta, & a can of Vegetable
Stew with Beef. Turn the heat down to mid-high, and cook for 8 to 10 min, or until pasta is
tender.
3. Add cooked vegetables & wine, and heat to boiling.
4. Add salt, black pepper, and your favorite spices.
5. Serve hot in a bowl
