Ludshii Macaroni and Egg Casserole
3/4 cup (12oz) of cooked macaroni
2 cups of steamed brocolli
1 can of corn kernels
1 can of green beans
2 cups of steamed carrots, chopped into oval circles
1 cup shredded cheddar чисе
2 cups of smoked sausage, chopped into half-moons
1 cup (8oz) cheese cream
1 cup of milk
salt & pepper to taste
1 packet of soup crackers or 4oz of bread crubs
3/4 cup of butter of margarine
For the egg mixture:
In a medium mixing bowl, with an electric mixer, beat softened cream cheese untill creamy. Add one egg at a time mixing in well with a mixer. Add a cup of milk, salt & peper to taste and mix it well.
In a separate medium bowl, mix together softend butter or margarine and broken into grumbs of soup crackers (I used 1 packet of Saltines Crakers, or you can use 4 oz of bread crubs).
In a large mixing bowl, mix together cooked macaroni, chopped sausage, and vegatables. I had 2 cups of steamed brocolli. 1 can (15oz) of corn kernels, drained well. 1 can (15oz) of green beans, drained. 2 cups of baby carrots, steamed, drained, and then chopped into diagonal circles or instead, you can add canned choped carrots, drained. Also, add a cup of sredded processed cheese. Add the egg mixture. Divide this mixture into two large (13 x 9 x 2 inch) pans, settle it down and sprinkle the crumb micture and some extra cheese on top. Put this all into oven on 350 F for 1 hour. Take it out, when the crust is golden, or you may check it with a toothpick/knife if ready. Let it stand and cool. Serve it while its still warm. Bon Appetit!
