METHOD:
Preheat the oven to 400°F.
1 Peel away the outer layers of the garlic bulb skin, leaving the skins of the individual cloves intact.
2 Using a knife, cut off 1/4 to a 1/2 inch of the top of cloves,
3 exposing the individual cloves of garlic.
4 Wrap each garlic head aluminum foil.
5 Drizzle a couple teaspoons of olive oil over each head, until well coated.
6 Shake some fresh ground black pepper on top
7 Cover with aluminum foil. Place the garlic heads in a baking pan; muffin pans work well for this purpose.
8 Bake at 400°F for 30-35 minutes, or until the cloves feel soft when pressed.
9 Allow the garlic to cool enough so you can touch it without burning yourself. Use a small small knife cut the skin slightly around each clove. Use your fingers to pull or squeeze the roasted garlic cloves out of their skins.

1. Make a Spread - Simple but delicious when spread on some crusty bread

3. Add to Pasta – A great way to add lots of flavor to pasta. See recipe here
4. Pizza Topping – For a milder, sweeter flavor, use roasted garlic instead of raw
5. Mashed Potatoes – Prepare as usual and mash in garlic together with the potatoes
6. Make Herbed Garlic Butter – Soften butter, chop herbs and mix with mashed garlic
7. Puree into a Dip – Throw in Food Processor with some white beans or yogurt
8. Throw into a Salad – Roasted garlic would be a nice addition to a simple salad like this one
9. Garlic-infused Oil – Roast a whole bunch of garlic heads and strain the leftover olive oil to keep for other recipes
